BUILD IT YOURSELF: Taking a chance at taking the reigns

Not far from the capital city of San José, high up in the beautiful West Valley, lies Sumava de Lourdes Micromill. Sumava is split into two farms, where coffee trees are aligned on steeply sloping plots surrounded by tall pines. In the distance, one can hear the sound of toucans in the trees. From the charming casita you can see over the raised beds and drying patios where some employees are uncovering the raised beds after a brief afternoon rain while others rake out beans that are drying on the concrete patio. This modern micromill is known for its boutique varieties and unique processing methods and even boasts a Cup of Excellence win.

Sumava de Lourdes was founded by Francisco Mena, a figurehead in the Costa Rica coffee scene. After taking over the farm and using his immense knowledge based on years of experience as an exporter, he won the Cup of Excellence in 2016. We’ve been working with Francisco for nearly a decade but this is the first time we’ve roasted his coffee here at Ruby.

This Kinkayou lot was grown on Monte Lourdes and is a variety separation of villa sarchi, a mutation of bourbon which was discovered in Costa Rica around 1960. It is well adapted to places like Monte Lourdes, exposed to high elevation and strong winds.

The processing method for this lot is known as “reposado” which means “rested”. It is a form of extended fermentation where the cherries are allowed to rest in clean jute bags or stainless steel tanks for up to 72 hours before being depulped. After depulping, the beans rest for 14-24 hours and then are thoroughly washed. The beans are evenly dried on raised beds for around 5 days before being transferred to drying patios for the remainder, sometimes taking up to two weeks. This processing lends a unique flavor profile to this lot. Jammy cherry notes, bright citrus acidity, and a syrupy body are what you can expect to taste in this cup.
