Ruby coffees are meant for sharing. Cheers is our annual tradition, curated to be the coffee you reach for when the days get cold, the one you brew for warm-spirited gatherings, and your go-to for holiday gifting. Like everything we roast at Ruby, it is roasted in a way that lifts up the sweet notes that each coffee has to offer, ensuring smooth and easy brewing no matter what method you’re using.
For the foundation of the blend, we returned to longtime partner Finca de Dios from Guatemala. This familiar coffee is from one of Ruby’s oldest relationships and the La Morena lot has become a go-to for this warming, fruit forward blend. As a base, it is smooth and sweet, providing a chocolatey backbone for balance and body.
Our roasting team tried many iterations before deciding on Cheers’ other two components. We knew we were looking for jammy berry notes and sparkling acidity. The stunning Ethiopia Bochessa is a perfect fit. This natural processed heirloom coffee from Sidama elevates Cheers with tangy berry, juicy citrus, and an elegant winey character.
Finally, we decided to bring in a favorite coffee of ours this year, a yellow caturra variety lot from Peru, produced by Felipe Estela. This component adds a decadence to this year’s blend, further enhancing the jammy berry notes of the Bochessa and bringing out the dried fruit notes in the Guatemala Finca de Dios base.
When reflecting on what makes Cheers what we (and you!) love and look forward to, it comes down to being familiar and sweet, yet something really special This year's release is a beautifully crafted medley that captures this spirit of the season.
