Xico, meaning “where there are honeycombs of yellow wax” in the indigenous language of Nahuatl, is ideally situated near the base of the Cofre del Perote Volcano. Land here is very fertile and suitable for almost any crop. However, because of Xicos close proximity to the Gulf of Mexico, cold air circulates from the north creating an unsuitable environment for coffee growing above 1800 meters due to the constant risk of frost.
Xico’s close proximity to Coatepec, also known as the coffee capital of Mexico, is a source of motivation for producers here. In order to be competitive in the local market, farmers have put more effort into planting and harvesting, vastly accelerating the pace at which they improve their precision and quality. While producers closer to the city have other employment opportunities if needed, those further away rely solely on agriculture, making them more susceptible to fluctuating coffee prices.
Farms here are small, usually about 2-3 Hectares in size. Farmers use native trees to provide much needed shade for the coffee trees, such as banana, ice cream bean tree, and oak. Farming in this area is deeply rooted in organic culture, so it is typical to only use chicken manure and other organic products to fertilize. During the harvesting season, producers use family labor for all the work. Coffee is harvested in Cherry then transported to the central collection center via mules, trucks, or ATVs, taking anywhere from 15 minutes to 1 hour.
This exemplary small lot truly comes from the sweet spot, and we think you’ll see that in this cup. With notes of dried fig, almond, maple, and brownie, this coffee is rich with a surprisingly smooth body. We’re thrilled to offer this inviting coffee on our menu for the very first time!
