Ignacio Quintero’s coffee comes to us from the town of Alto de Topa in the Inzá region of Colombia. The town is situated between Huila, the highest volcano in Colombia, and Volcán Puracé. Its soils are fertile and the area is rich with the agricultural traditions of its indigenous communities going back more than 2000 years. Today, the Páez people inhabit the region and focus on growing coffee as well as food crops for their communities on their small 1-2 hectare farms.
The 1300 kilos (2866 pounds) of coffee cherries grown by Ignacio Quintero each year are processed and depulped right on the farm. After drying for 12-15 days on covered raised beds, the parchment (coffee beans without pulp or mucilage, but still with their parchment layer intact) is brought by mule or truck over the forested mountain terrain to the nearest dry mill and rested until ready for export. He is a part of ASORCAFE, an association of producers dedicated to ethics and transparency, as well as quality and consistency.
We are excited to bring coffee from Ignacio Quintero back to Ruby after first having it in 2016. This year’s lot is bursting with sweetness, showcasing the sugary and fruity complexity of high altitude Colombian coffee beans.
